Recipe:Vegan Butternut Squash & Apple Soup

A relaxing sweet soup

Half a butternut squash – chop (1 inch pieces), peel and deseed

Half an organic apple – chop (small), peel

Place in a small saucepan and add water to almost covering squash & apple

Add a pinch of salt

Bring to the boil, then reduce heat and simmer for 15-20 minutes

Squash should be soft. Use an immersion blender or transfer to a food processor to mix

Return to saucepan add a tsp of tamari and leave for 3 minutes.

Serve garnished with green onions, parsley or cilantro.

This soup helps if you crave something sweet, but want to stay away from sugar or sweeteners.

    I love the sweet flavors of fall. I’ve made butternut/pear soup, not butternut apple, but I’m sure the apple version is just as good. I’ve also seen a recipe for soup with butternut squash and apple cider which sounds excellent, too. I enjoyed stopping by your blog today, I hope you are doing well with your health.
